Since I'm on my little health kick, I am trying new things--mainly vegetables. So, last night I decided to make chicken stir fry style on the stove. I marinated it like normal- in italian dressing and added some seasoning....and a little butter :) I made garlic and cheese biscuits (we can't go ALL healthy!)

People, I am so uneducated when it comes to vegetables that I had to Google a picture of zucchini on my phone while I was in the grocery store looking for it to know what color/shape to look for. I know, you don't know whether to laugh or have pity on me! Honestly I thought it was yellow, so I'm glad I did Google it or I probably would've been looking for a while. I guess I can thank my mama for my lack of knowledge in this department- Thank You, Mama! So, I washed the zucchini, cut it up, let it marinate in italian dressing and threw it in a frying pan. I also added a little butter, S & P. Now, I was not a huge fan (shocker, I know!) but I think it's one of those things I could MAKE myself eat and adapt my tastebuds to like it. As mentioned in my last healthy post, I am a texture girl, so I didn't like the fact that when I bit a piece, juice squirted all in my mouth. Ew. Someone told me to cook it in terrayaki sauce, so that is what we are going to try tonight! More to come on that tomorrow :)

I don't know how healthy you are going but tofu is really good and it can be made to taste like any seasoning you give it! But, if you're big on texture I'm not sure whether you'll be able to handle it. But this is a tip: Marinate it in teriyaki sauce and use it like chicken in a salad, pita, sandwich, etc. (Learned this when I worked at Mellow.)
